This xanthan gum is a food and cosmetic emulsifier/stabilizer, which is practically odorless and tasteless. It is a polysaccharide with unique physical and chemical properties. Xanthan gum is a natural thickener and a fine, off-white powder that is often used in foods. One of its best features is that it is gluten-free. Xanthan gum is mainly used in the preparation of bakery products (breads and cakes), and homemade ice creams and sorbets. This Terpenic dietary supplement is produced by the bacterium Xanthomonas campestris, through the fermentation of sugar beet, cane or corn. It is a combination of four compounds: glucose, mannose, glucuronic acid and pyruvic acid. This gum has very little influence on temperature and increases the viscosity of a liquid. Xanthan gum is suitable for a vegetarian diet.
